Latte-dock is part of the KDE project, so it's going to pull in a TON of qt and plasma dependencies.
I'm not running XFCE (I'm using Openbox), but I just installed plank to test it. It put an entry in my menu (which worked and opened the dock), and I also tried running it from the terminal (which also worked and opened the dock). So, I'm not sure why you got that error.
You could just create another xfce4 panel and set it up as a dock; however, you won't get the animations like plank.
Ah, right, haven't actually run MIYO since that weird green pukey back drop, (not sure how long ago that was).....

There's a note on the Welcome Screen about the application and a button on the Welcome Screen to open the application. It uses setxkbmap to temporarily adopt the user's keyboard layout in the live session by clicking a button on the application after it opens
..although...
it does use US English spelling on the buttons in the application, I also have the country's national flag on each button too (in case that would help user's).
I was concerned if Andrwe was referring to MiyoLinux, because I know of several UK users, and they have reported that it works perfectly for them. So, if it wasn't working for Andrwe with UK English, I wanted to investigate further.
However, if Andrwe was just giving his view about systems not being able to provide the correct keyboard layout, then that's understandable, and I wanted Andrwe to know that.
Yes, it is a VERY SERIOUS PROBLEM. many people will be unable to enter their names without accents, or domain names for web sites they need to refer to - possibly even the data needed to name their only available wifi AP.
In my case (English speaking UK keyboard user) 9/10 times, I will use my @ and ", and get the opposite - seriously annoying, but not fatal. However, I have several other keys which also do not type what is on them <> appear on the correct keys, but also on vertical bar and backslash. No backslash is reasonably close to fatal, no vertical bar can be fatal.

May I ask if your response has to do with MiyoLinux? I only ask, because this thread is very old. However, because of this thread, I coded a "Live Keyboard Layout" application for MiyoLinux...which allows non-US users to temporarily adopt their native keyboard layout in a MiyoLinux Live Session.
If that is the case,
1. Did you try the application from the "Welcome Screen" or from the menu?
2. If so, did the system fail to adopt your keyboard layout?
If so, please let me know so that I can look over the code.

I realize that this may not be of much use to very many people, but I thought that I would post it just in case it may help someone.
My favorite GUI music player is Pragha. However, if you install it on an "alsa-only" system, it won't play out-of-the-box.
When looking at the recommended packages, it only recommends gstreamer1.0-plugins-good and gstreamer1.0-pulseaudio. Both will be included in a "normal" installation of Pragha.
You can safely remove gstreamer1.0-pulseaudio after the installation.
Anyway...back to the topic. It won't play on an alsa-only system after installation.
To get it to work, you will need to also install gstreamer1.0-plugins-bad...even though it's not listed as a recommended package.
After installing that, and you have Pragha set to use alsa, it works perfectly.

Miyo-Kwin is now available.
What it's not: it's not Plasma nor LXQt.
What it is: it's a minimal system that uses Kwin as a standalone window manager. So, you get "some" of the window effects of Plasma without all of the additional bloat of Plasma.
You can kind'a-sort'a (?) think of it as Openbox with Kwin controlling the windows. ...but that's not really what it is. Wobbly windows. Windows fall apart when closing them. Windows are sucked into the panel with the "magic lamp" effect when minimizing a window...n'stuff like that.
Now...what set me on this path was when I read where someone said that you couldn't use Kwin as a standalone window manager...so I took that as a challenge. LOL!
Now (part 2)...is it perfect?
No. There are some parts of the "System Settings" that may not work as they should...thanks KDE developers!
It's definitely usable; I've been using it for several weeks now as my daily driver.
I've stripped it down as much as I could without including all of the KDE bloat, but there are still a few items in "System Settings" that may or may not work. I'm not a desktop environment user, so I'm a bit on the downside as to how to remove those items or get them to work. For all I know, they may work.
Anyway, I decided to release this just to show that Kwin could be used as a standalone window manager. If you want to try it, have fun with it. Would I use it as a daily-driver? I would, but my needs may not be yours. It may work perfectly for you like it does for me.
It may not be perfect, but at least it's not perfect.

I supplied a live .iso that used debootstrap to install beowulf. It still should work.

Edit: or you can download the newer Deboot-Ceres, and just change ceres to beowulf in the debootstrap command.

Here are a couple of things that I noticed and hope it may be of help to you...
The name of the .iso has an extra space toward the end...between amd64 and .iso
I use dd to burn .isos onto USBs. That extra space gave my terminal a nervous-jerkdown. Hahaha! I don't know if GUI apps are affected by the extra space or not.
Before I installed it, I looked over all of the calamares config files, and I noticed in one of them, the "Reboot" command was using a systemctl command for the reboot command of the installer. So, when the installation finished, though reboot was checked, it didn't reboot. I wish I had changed it while in the live session to loginctl reboot, but I didn't think about it at the time...not even sure it would've worked. Unfortunately, I don't recall which config file that was, and they have disappeared after installation and reboot. When I get time, I'll boot the USB again and find it to give you the path to the file.
Regarding the Installer being name "Install Debian". It seems like I recall (a year or two ago) that if you tried to change that, calamares (on Debian-based systems) didn't like it and wouldn't work. I don't remember the particulars though. Maybe there's a way around it???
I just run the following commands as root...
ufw default deny
ufw enable
After that second command, it shows a message saying that ufw is enabled and added to system startup.
...and you can check if it's running with...
ufw status

I doubt that it will help, but here's a little story from immediately after I got my booster last Autumn (it connects with your report of eye-problems):-
I walked to town (~20 minutes) & had just bought a cheap hot-chicken sandwich on my way to the bus-stop when my eyesight unhooked. It's a bit difficult to explain, but our eyesight auto-focuses & auto-co-ordinates each eye whilst doing so. In this case, for the first time, and with no reason that I can discern, apart perhaps due to the booster jab, the latter auto-coordination unhooked and I found myself with each eye looking around independently. I had to grab a lamppost to keep my balance, then closed both eyes & the nausea which had been building rapidly backed off. Opening both eyes again it immediately restarted, so I closed them both again & wondered how the hell I was going to cross the road.
On an inspiration I opened just one eye & there was no problem. A minute or two later I opened the other & everything was back to normal. It has never reoccurred. Man, that was strange, but if the booster helps me live I'm happy to pay that price.
I hope that your wife & son do not have any ongoing complications.
