If the machine has on-board graphics output, what happens if you connect one monitor to that? Have you tried / can you try with different BIOS settings to select onboard/discrete graphics?
I used to find that updates to the Nvidia drivers would take a couple of reboots to sort themselves out, and in the meantime only the onboard output was OK. But if you can get X ok, there's something more persistent going on ...
